ITALIAN HONEY
The composition of the honeys produced in the Umbria region, which are made from a wide array of botanical flora, imbues Umbrian honey with characteristics of colour, aroma and flavour that often change over the years. These evolving properties serve to guarantee the authenticity of the honey, which – if harvested when the humidity is below 18% – tends to crystallise in next-to-no-time. As the temperature falls, the honey is transformed from a liquid to a relatively thick, crystalline paste.
Due to the contraction of the mass of the honey, this transformation often leads to the creation of a clear, sugar-like substance on the sides of the jar.
